Smashed cucumber salad with lemon and celery salt
Enjoy a refreshing and tangy smashed cucumber salad infused with zesty lemon and savory celery salt. A perfect balance of flavors in every bite.
Ingredients:
- mini seedless or Persian cucumbers or 1 small English hothouse cucumber (about 12 oz.)
- 3x1" strip lemon zest, very thinly sliced
- Tbsp. fresh lemon juice
- Tbsp. extra-virgin olive oil
- tsp. celery salt, plus more for serving
Instructions:
- Lightly crush cucumbers using a rolling pin or the back of a heavy knife to slightly break them apart. Tear them into uneven 2" pieces and place them in a medium bowl; lightly season with salt. Allow to sit for at least 5 minutes and up to 1 hour.
- In the meantime, blend lemon zest, lemon juice, oil, and ¼ tsp. celery salt in a medium bowl until well mixed; season the dressing with salt.
- Strain the cucumbers, getting rid of any liquid they may have released. Transfer them to the bowl with the dressing and gently mix to coat. Sprinkle with additional celery salt.
