Smashed cucumber salad with italian dressing

Ingredients:

  • mini seedless or Persian cucumbers or 1 small English hothouse cucumber (about 12 oz.)
  • Kosher salt
  • Tbsp. red wine vinegar, divided
  • tsp. honey, divided
  • small red onion, thinly sliced
  • Tbsp. extra-virgin olive oil
  • Freshly ground black pepper
  • Fresh mint leaves (for serving)

Instructions:

  1. Gently crush cucumbers using a rolling pin or the back of a heavy knife just to slightly break them open. Tear them into irregular 2 pieces and place them in a medium bowl; lightly season with salt. Allow them to sit for at least 5 minutes and up to 1 hour.In the meantime, blend 3 tablespoons of vinegar, 1 teaspoon of honey, a generous pinch of salt, and 3 tablespoons of water in a medium bowl until well combined. Add onion and mix to coat. Let it rest until it softens, at least 5 minutes.Beat 3 tablespoons of oil, the remaining 3 tablespoons of vinegar, and the remaining ½ teaspoon of honey in a medium bowl until blended; season the dressing with salt and pepper.Drain the cucumbers, getting rid of any liquid they may have released. Transfer them to the bowl with the dressing and toss them several times to coat. Drain the onions; place the pickled onions and mint leaves on top of the cucumbers.Prepare in Advance: The onions can be pickled up to 3 days earlier. Cover and refrigerate.
