Smashed cucumber salad
Try this refreshing smashed cucumber salad recipe perfect for summer. Bursting with crisp flavors and tossed in a zesty dressing - a true culinary delight!
Ingredients:
- 6 baby cucumbers
- ½ teaspoon salt
- 2 tablespoons ume plum vinegar
- 1 tablespoon reduced-sodium tamari
- 2 teaspoons toasted sesame oil
- 1 teaspoon chili oil
- 1 teaspoon grated garlic
- 1 teaspoon granulated sugar
- 1 tablespoon chopped fresh cilantro
- 2 teaspoons sesame seeds
Instructions:
- Lay the cucumbers on a cutting board and place a paper towel or clean kitchen towel over them. Crush them with a meat mallet or a heavy pot until they begin to split. Move them to a colander and sprinkle some salt over them. Allow them to sit for 10 minutes.
- While waiting, mix together vinegar, tamari, sesame oil, chili oil, garlic, and sugar in a big bowl.
- Transfer the cucumbers onto a clean kitchen towel and lightly dry them by patting. Put the cucumbers into the prepared dressing and mix well. Garnish with cilantro and sesame seeds before serving.
