Smashed cucumber salad

Delight your taste buds with this refreshing smashed cucumber salad. Perfect blend of flavors and textures in every bite!

Ingredients:

  • 6 medium Persian cucumbers (about 1 lb.)
  • 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt
  • 1 garlic clove, finely grated
  • ¼ cup tahini
  • 3 Tbsp. fresh lime juice
  • 1 Tbsp. soy sauce
  • 1 Tbsp. unseasoned rice vinegar
  • 1 Tbsp. white miso
  • 1 tsp. finely grated ginger
  • 1 tsp. sugar
  • 1 tsp. toasted sesame oil
  • Chili oil (for serving)
  • 2 scallions, thinly sliced on a diagonal
  • 1 tsp. toasted sesame seeds

Instructions:

  1. Cut the cucumbers lengthwise in half, then slice them into 1/4-inch thick pieces on a deep diagonal, making pieces that are 2 to 3 inches long. Put the cucumbers in a large bowl, sprinkle salt over them, and mix well. Cover the bowl and let it chill for at least 1 hour or up to 12 hours. Drain the excess liquid from the cucumbers.
  2. In a small bowl, mix together minced garlic, tahini, lime juice, soy sauce, vinegar, miso, ginger, sugar, and sesame oil until well combined. Pour the dressing over the cucumbers and mix thoroughly to cover them evenly.
  3. Transfer the cucumber salad to a serving platter. Drizzle chili oil on top and garnish with sliced scallions and sesame seeds.
