Smashed chinese cucumber salad

Delight in the refreshing crunch of this smashed Chinese cucumber salad. Tangy, savory flavors will dance on your taste buds with every bite.

Ingredients:

  • 450g Persian or mini cucumbers
  • 1 teaspoon kosher salt 
  • 1 tablespoon soy sauce 
  • 1 tablespoon Chinese black vinegar
  • 2 teaspoons toasted sesame oil
  • 1 teaspoon sugar
  • 1/2 teaspoon crushed red chile flakes
  • Toasted sesame seeds and fresh cilantro, for garnish

Instructions:

  1. Place the cucumbers in a sealable plastic pouch. Close the bag and gently crush the cucumbers using your hand. Remove the cucumbers from the bag and chop them into 1-inch pieces. Transfer them to a bowl and sprinkle with salt. Mix well to ensure they are evenly coated.
  2. Mix the soy sauce, vinegar, sesame oil, sugar, and chili flakes in a medium bowl. Stir until the sugar is fully dissolved. 
  3. Include the cucumbers, then stir and top with the toasted sesame seeds and cilantro.
