Slow-cooker german potato salad

Ingredients:
- 1/2 cup apple cider vinegar
- 2 tablespoons honey
- Kosher salt and freshly ground black pepper
- 2270g large Yukon gold potatoes, quartered (about 12)
- 10 slices bacon, cut into 1/2-inch pieces
- 1/4 cup whole-grain mustard
- 1 bunch scallions, thinly sliced (about 1 cup)
Instructions:
- Mix together 2 cups of water, 1/4 cup of vinegar, 1 tablespoon of honey, 1 tablespoon of salt, and 1/2 teaspoon of pepper in the pot of a 6-quart slow cooker. Put in the potatoes and stir well. Put on the lid and cook on low heat until the potatoes are soft but still intact, about 4 hours.
- Switch off the heat and drain the potatoes thoroughly. Place the potatoes back into the slow cooker pot and cover with the lid to keep them warm.
- In a large frying pan over medium heat, cook the bacon until it is browned and crispy, stirring occasionally, for about 4 to 5 minutes. Remove the pan from the heat and use a slotted spoon to move the bacon to a paper towel-lined plate. Discard all but 4 tablespoons of the bacon fat. Add the mustard, the remaining 1/2 cup of vinegar, and 1 tablespoon of honey to the pan and mix well. Pour this dressing into the slow cooker along with half of the bacon and the scallions, saving 2 tablespoons for garnish. Gently mix everything together and season with more salt and pepper if required. Transfer the potato salad to a large serving dish or bowl and sprinkle the remaining bacon and reserved scallions on top before serving.
