Simple summer salad
Indulge in the refreshing flavors of a simple summer salad bursting with crisp veggies, zesty dressings, and a harmonious blend of seasonal ingredients.
Ingredients:
- 3 Ears of corn
- 2 tomatos
- 1 avocado
- 2 limes (juiced)
- 1 mango
- 1 15.5 oz.can of black beans (feel free to use fresh cooked black beans! I am just lazy!! )
- 1 cup quinoa
- 1/4 teaspoon chipotle chile powder
- 1/4 teaspoon chili powder
- 1/8 teaspoon cayenne chili powder
- 1/2 teaspoon cumin
- salt (to taste)
Instructions:
- Wash one cup of quinoa and cook it in two cups of water until the quinoa is tender and transparent.
- Prepare the corn and allow it to come to room temperature.
- Dice the avocado, tomatoes, and mango into small pieces and place them in a large bowl.
- Cut the corn off the cob. Mix the kernels with the other chopped vegetables.
- Combine the quinoa with the vegetables in the bowl.
- Rinse and strain the black beans, then include them with the vegetables and quinoa in the bowl.
- Mix in the seasonings and lime juice. Stir well and savor the dish!
