Simple seabass-salad ceviche

Fresh seabass ceviche salad with a colorful mix of veggies, tangy lime juice, and fragrant herbs, the perfect refreshing dish for a light and flavorful meal.

Ingredients:

  • 2 sashimi-grade sea bass fillets, (about 100 grams)
  • 1/4 cup fresh lime juice, some pulp O.K.
  • 1 Asian cucumber, thinly sliced
  • 1/2 teaspoon salt
  • 1 lemon, divided
  • 1 tomato, 1/2-inch diced
  • 1/4 red onion, thinly sliced
  • 2 tablespoons extra virgin olive oil
  • pepper, freshly-milled

Instructions:

  1. Ensure you select the freshest sashimi-grade fish possible. Remove the skin from the sea bass fillets, then proceed to slice them into 1/4 inch pieces. Place the slices in a bowl that is nonmetallic.
  2. Start by scrubbing the lemon thoroughly to eliminate any wax. Afterward, pour boiling water over the lemon. Squeeze the juice from half of the lemon and pour the lemon as well as lime juice over the fish. Stir the mixture every 15 minutes for approximately an hour, and keep it stored in the fridge.
  3. Sprinkle salt over the cucumbers and allow them to sit for around 5 minutes. Proceed by massaging the cucumber slices and then letting them sit for an additional 5 minutes. Squeeze the cucumber slices to eliminate excess juice.
  4. Remove the fish from the liquid and transfer it to a new bowl. Combine the fish with cucumbers, onion slices, and diced tomato. Thinly slice the remaining half of the lemon, then cut each slice into sixths before adding them to the fish.
  5. Mix olive oil and pepper into the fish. Stir well, and add salt if necessary. Serve the dish chilled.
  6. For a fantastic wine pairing, consider trying a 100% Verdejo Spanish white wine from the Toro region, such as the delightful Tokanto. You might find that combining the two results in a synergy greater than the sum of their parts, like 1 + 1 = 3!
  7. If you prefer, you can slice the fillets to a thicker size or cube them. However, keep in mind that additional time will be required for the juices to 'cook' the fish.
