Ingredients:
- 1 cucumber (Japanese, English, Persian)
- 1 tablespoon Korean soy sauce (Kikkoman works too)
- 2 tablespoons Rice Vinegar
- 1 tablespoon Sugar
- 1/2 teaspoon Red Chili powder
- 1/4 teaspoon sesame seeds
- 2 green onions, chopped
Instructions:
- Cut cucumbers into thin slices, approximately 1/8 inch (3 mm) thick.
- Combine soy sauce, vinegar, and sugar in a bowl. Drizzle the mixture over the sliced cucumbers.
- Next, sprinkle in 1/2 teaspoon of chili powder and sesame seeds. Stir well and adjust seasoning to taste. Increase the amount of chili powder if desired. Following this sequence enables you to adjust the spiciness according to your preference.
