Simple green bean salad

Ingredients:

  • 2/3 cup plus 2 tablespoons extra-virgin olive oil
  • 1 cup wheat berries, soaked in water overnight, drained and thoroughly dried
  • Kosher salt
  • 450g small green beans, stems snapped or cut off
  • 2 tablespoons sherry vinegar
  • 2 tablespoons balsamic vinegar
  • Freshly ground pepper

Instructions:

  1. Place a medium saucepan on the stove over medium-high heat and pour in 2 tablespoons of olive oil. Once the oil is heated, take the pan off the heat and add the wheat berries, then return it to the stove. Sprinkle in a bit of salt and let the berries toast. Pour in 3 1/2 cups of water and simmer until the wheat berries start to soften and the water is mostly absorbed, for approximately 45 minutes. Taste the berries; they should have a chewy texture but still be firm. Set aside.
  2. While waiting, boil a large pot of water on medium heat. Season the water with salt until it is slightly salty. To test the saltiness, taste a drop of water.
  3. Prepare an ice bath by filling a big bowl with cold water. Drop in some ice cubes and place a strainer inside the bowl. Submerge the green beans in the ice bath using the strainer to revive any beans that are wilting. Drain and add them to the boiling water; cook for 2 to 3 minutes. Use a slotted spoon or spider to take out the beans from the water, then quickly transfer them back into the ice bath. Let them sit in the ice bath for a couple of minutes, swirling them gently.
  4. Dry the green beans with a kitchen towel and move them to a serving bowl. Refrigerate.
  5. In a separate medium bowl, mix the remaining 2/3 cup of olive oil, sherry vinegar, and balsamic vinegar. Season with salt and pepper and set it aside. When you're ready to serve, add the wheat berries to the beans and drizzle with the vinaigrette to your liking. Toss together and season with salt and pepper, if necessary. Serve right away.
