Simple citrus almond salad
Delight in the vibrant flavors of citrus and the crunch of almonds in this refreshing salad. A perfect harmony of tangy and nutty notes.
Ingredients:
- 2 cloves garlic
- 1 tablespoon dijon mustard
- 1/2 cup extra virgin olive oil
- 1/4 cup orange juice
- 1 tablespoon white wine or red wine vinegar
- 1 tablespoon 1 teaspoon honey
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/3 cup thinly sliced red onion
- 3/4 cup queso fresco, crumbled
- 1 head of Boston bibb lettuce, leaves roughly torn
- 1/4 cup toasted sliced almonds
- 3-4 basil leaves, cut in chiffonade (very thin strips)
Instructions:
- Mix together the orange zest, minced garlic, dijon mustard, olive oil, freshly squeezed orange juice, vinegar, honey, salt, and pepper in a small bowl. Whisk until well combined and set it aside. (This recipe yields extra dressing. Store the remainder for other salads.)
- Prepare the orange segments. Remove the peel and white pith from the orange using a sharp knife to reveal the flesh. Carefully slice in between the membranes of each segment to release them into a small bowl. Keep aside.
- Combine the lettuce, sliced onion, crumbled queso fresco, and prepared orange segments in a large salad bowl. Drizzle 4-5 tablespoons of the dressing over the salad and gently mix. If more dressing is needed, add gradually. Sprinkle with toasted almonds and torn basil leaves before serving.
