Simple citrus almond salad

Delight in the vibrant flavors of citrus and the crunch of almonds in this refreshing salad. A perfect harmony of tangy and nutty notes.

Ingredients:

  • 2 cloves garlic
  • 1 tablespoon dijon mustard
  • 1/2 cup extra virgin olive oil
  • 1/4 cup orange juice
  • 1 tablespoon white wine or red wine vinegar
  • 1 tablespoon 1 teaspoon honey
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/3 cup thinly sliced red onion
  • 3/4 cup queso fresco, crumbled
  • 1 head of Boston bibb lettuce, leaves roughly torn
  • 1/4 cup toasted sliced almonds
  • 3-4 basil leaves, cut in chiffonade (very thin strips)

Instructions:

  1. Mix together the orange zest, minced garlic, dijon mustard, olive oil, freshly squeezed orange juice, vinegar, honey, salt, and pepper in a small bowl. Whisk until well combined and set it aside. (This recipe yields extra dressing. Store the remainder for other salads.)
  2. Prepare the orange segments. Remove the peel and white pith from the orange using a sharp knife to reveal the flesh. Carefully slice in between the membranes of each segment to release them into a small bowl. Keep aside.
  3. Combine the lettuce, sliced onion, crumbled queso fresco, and prepared orange segments in a large salad bowl. Drizzle 4-5 tablespoons of the dressing over the salad and gently mix. If more dressing is needed, add gradually. Sprinkle with toasted almonds and torn basil leaves before serving.
