Silver dollar corn fritters
Delicious silver dollar corn fritters, a perfect blend of crunchy and savory flavors. Ideal for a quick and tasty meal or as a tempting side dish.
Ingredients:
- 1 cup reserved bean mix from Roasted Corn and Bean Salad
- 1/2 cup baking mix
- 1/4 cup grated jack cheese
- 1 cup reserved grits from Shrimp and Grits
- 2 eggs, beaten
- 1 ear of corn from Roasted Corn and Bean Salad, kernels cut off cob
- 1 ear of corn from Roasted Corn and Bean Salad, kernels cut off cob
- 1/2 cup sour cream
- 2 tablespoons chopped fresh parsley
- Salt and freshly ground black pepper
- 1/4 cup canola oil
Instructions:
- Heat the oil in a nonstick skillet over medium heat.
- In a large bowl, use a potato masher to crush the grits. Combine the mashed grits with the bean mixture, baking mix, cheese, eggs, and corn, then mix thoroughly.
- With a small ice cream scoop, place spoonfuls of the batter into the skillet. Cook until both sides are cooked through and turn golden brown, which should take about 3 minutes per side. Repeat this step with the remaining batter. Once cooked, transfer the fritters to a plate lined with a brown paper bag or paper towel to absorb excess oil.
- While the fritters cook, mix sour cream, parsley, salt, and pepper in a medium bowl.
- Arrange the fritters on a serving dish and accompany them with the sour cream mixture on the side.
