Sideline salad

Ingredients:

  • 6 ears corn, husks removed
  • 6 tablespoons canola oil
  • Salt and freshly ground black pepper
  • 4 ripe avocados
  • 1 pint teardrop tomatoes
  • 1 Serrano chili
  • 1 small red onion
  • 1 lime
  • 1/2 cup cilantro leaves
  • 1/4 cup olive oil

Instructions:

  1. Heat up the grill until it reaches medium-high temperature.
  2. Coat the peeled corn with canola oil, sprinkle with salt and pepper. Grill until all sides are golden brown. Take off the kernels from the cob and place them in a big bowl. Dice the avocados into large pieces and mix them with the corn. Halve the tomatoes and incorporate them with the corn. Finely chop the serrano chili and onion then add to the corn. Grate the lime skin and squeeze the juice into the mixture. Coarsely chop the cilantro, include in the mixture. Pour in the olive oil. Stir well to combine, season according to your taste.
