Sicilian tomato salad with pecorino vinaigrette

Indulge in the flavors of Sicily with our vibrant tomato salad topped with a zesty pecorino vinaigrette. A burst of Mediterranean taste in every bite!

Ingredients:

  • 1 pint cherry tomatoes, halved
  • 1/2 small red onion, sliced very thinly
  • 1/4 cup kalamata olives, pitted and halved
  • 2 tablespoons fresh oregano leaves
  • 1 tablespoon red wine vinegar
  • 2 tablespoons finely grated aged pecorino
  • pinch of kosher salt and black pepper
  • 3 tablespoons extra virgin olive oil
  • 4 thick slices country white bread
  • 1 clove garlic, smashed
  • extra virgin olive oil, for drizzling
  • kosher salt and black pepper, for sprinkling
  • 60g ricotta salata, grated

Instructions:

  1. Preheat your charcoal grill or gas grill.
  2. Mix together the cherry tomatoes, red onion, kalamata olives, and oregano in a medium-sized bowl.
  3. In a separate small bowl, stir the red wine vinegar, grated pecorino cheese, a pinch of kosher salt, and pepper. Gradually add the 3 tablespoons of olive oil while whisking until well blended. Pour this over the tomato mixture and mix well.
  4. Grill the bread slices for about a minute on each side until nicely charred. Rub the grilled bread with a crushed garlic clove and drizzle both sides with olive oil. Sprinkle with kosher salt and freshly ground black pepper.
  5. To put together the dish, place two grilled bread slices at the bottom of two bowls. Spoon the tomato mixture over the bread slices and top with grated ricotta salata.
