Sicilian orange, fennel and black olives salad
Delight your taste buds with this vibrant Sicilian salad, combining tangy orange slices, crisp fennel, and savory black olives for a burst of Mediterranean flavors.
Ingredients:
- 3 navel oranges
- 1 large fennel
- 1 cup black olives (calamata would be perfect)
- 2 tablespoons extra virgin olive oil
- 1 teaspoon chilli pepper crushed
- 1 sprig fresh mint
- kosher salt
Instructions:
- Wash the fennel and remove the green leaves, stalk, and bottom root. Cut it in half and slice thinly across.
- Peel the oranges, making sure to remove all the white skin. Cut them in half and slice into 1/4" thick pieces.
- If desired, halve the olives to take out the pits.
- Cut the mint into fine strips.
- Combine the fennel, oranges, olives in a salad bowl, then add the mint, olive oil, chili pepper, and a pinch of salt. If making ahead, add the dressing to the salad right before serving.
