Shrimp salad sandwiches

Ingredients:
- 3 tablespoons extra-virgin olive oil
- 3 tablespoons white-wine vinegar

- 10 cups mixed greens
- 12 cooked extra-large shrimp (16-20 count), peeled and halved lengthwise
