Shrimp salad

Ingredients:

  • 2¼ tablespoons white wine vinegar
  • ½ teaspoons salt
  • ½ tablespoons chili powder
  • 3 tablespoons extra virgin olive oil
  • 3 cups butterhead lettuce
  • 2 grapefruits
  • 2 avocados
  • 280g shrimp
  • 1 sprig scallion, including top, thinly sliced
  • 4 tablespoons chopped cilantro
  • 1 pinch Pepper flakes or paprika

Instructions:

  1. Mix together white wine vinegar, salt, chili powder, and olive oil in a small bowl and whisk until well combined.
  2. Thoroughly wash the lettuce and tear it into medium-sized pieces. Peel and slice the avocados, and peel and segment the grapefruits.
  3. Cook the shrimps in preheated water until they become opaque and pink. Remove from heat and let them cool.
  4. Combine the lettuce, cooked shrimps, avocados, and grapefruits with the prepared dressing from the first step.
  5. Arrange the salad in a large serving dish. Garnish with scallions, cilantro, or red pepper flakes if desired.
  6. Additional Information - Shrimp salad is commonly served slightly chilled, but it can also be served at room temperature. - Once dressed, serve the salad immediately to prevent the lettuce from becoming soggy.
