Shrimp-quinoa salad with feta and tomatoes
Delight in a flavorful shrimp-quinoa salad featuring tangy feta and juicy tomatoes. A harmonious dish bursting with savory and fresh notes.
Ingredients:
- 4 cups fresh salad greens
- 1 cup cooked quinoa (or rice)
- kosher salt, fresh ground pepper
- 2 tomatoes, chopped
- 3/4 cup feta, cubed
- 230g cooked shrimp
- 1 tablespoon dried oregano
- 1 lemon (use juice of half and rest sliced for garnish)
- 1/3 cup kalamata olives, chopped (optional)
Instructions:
- Arrange salad greens around the perimeter of a large serving platter and place the quinoa in the center. Season the quinoa with salt, pepper, crushed red pepper, and a drizzle of olive oil. Layer the tomatoes evenly over the quinoa, followed by a layer of feta and shrimp on top of the tomatoes. Scatter minced peppers over the shrimp. Dust the entire salad with dried oregano and squeeze the juice of half a lemon over everything. Season with salt and pepper and decorate with olives, if desired. Drizzle with an additional 2 tablespoons of olive oil. Decorate with lemon slices and serve chilled.
