Shrimp cobb salad

Delight in the refreshing blend of succulent shrimp, crisp greens, flavorful bacon, creamy avocado, and tangy blue cheese in this classic cobb salad.

Ingredients:

  • 1 1/2 lb jumbo shrimp (peeled and deveined)
  • 2 teaspoons Old Bay Seasoning
  • 2 tablespoons canola oil
  • flour for dusting shrimp
  • 1 romaine heart (sliced)
  • 450g mixed baby greens of choice
  • 4 hard boiled eggs (quartered)
  • 1 pint cherry tomatoes (halved)
  • 5 radishes (thinly sliced)
  • 5 slices thick cut bacon (cooked and roughly chopped)
  • 2–3 avocados (diced)
  • 1 bunch chopped chives (for garnish)

  2. Place a generous amount of greens in a large and wide serving bowl until it's full. Neatly arrange the tomatoes, eggs, radishes, bacon, and avocados in rows on top of the greens, leaving a space in the middle for the shrimp. For the shrimp, heat some oil in a cast iron or heavy-bottomed skillet. Dry the shrimp with a paper towel and season them with Old Bay seasoning. Lightly dust the shrimp with flour to coat them and soak up any extra moisture, ensuring a crispy outer layer. Once the oil is hot, sear the shrimp for about 4 minutes on each side (you might need to do this in batches to prevent overcrowding in the pan). Remove the shrimp from the pan and place them on the salad. Pour half of the dressing over the salad, keeping the rest to serve on the side. Sprinkle fresh chives on top as a garnish and savor the dish!
