Shrimp caesar salad
Indulge in the rich flavors of shrimp caesar salad, a delicious and classic dish that combines succulent shrimp with crisp greens and creamy dressing.
Ingredients:
- 2 1/2 tablespoons freshly squeezed lemon juice
- 2 teaspoons Dijon mustard
- 1 teaspoon anchovy paste
- 2 to 3 cloves garlic
- 3/4 cup extra-virgin olive oil, plus extra for brushing
- 2 teaspoons Worcestershire sauce
- 1/2 cup grated Parmesan
- Kosher salt and freshly ground black pepper

- 450g large shrimp (20/25), peeled and deveined
- 12-inches of baguette cut into 1-inch cubes (about 24 croutons)
- 8 pickled red hot cherry peppers
- 4 romaine lettuce hearts, halved lengthwise
Instructions:
- Submerge eight 12-inch bamboo skewers in lukewarm water, for approximately 30 minutes.
- Heat up a grill or grill pan over medium-high heat. Prepare the dressing: Blend together lemon juice, mustard, Worcestershire sauce, anchovy paste, and garlic in a food processor. Slowly incorporate the olive oil while the food processor is on. Mix in the Parmesan cheese. Season with salt and pepper.
- Coat the shrimp with 2 tablespoons of the prepared dressing, and the bread cubes with another 2 tablespoons of the dressing. Skewer the shrimp on 4 sticks and the bread cubes on 4 other sticks. Add a hot cherry pepper on top of each skewer. Grill the bread cube skewers until they are crispy with charred lines, for about 30 seconds to 1 minute per side. Take them off the grill.
- Grill the shrimp skewers until they become pink, flipping them once, for 3 to 4 minutes.
- Lightly brush the romaine lettuce with olive oil and grill it until visible grill marks show, for 1 to 2 minutes per side. Cut the lettuce into 1 1/2-inch-wide strips.
- Mix the lettuce with 1/2 cup of dressing and season with salt and pepper to your preference. Arrange the shrimp and crouton skewers on the salad, and drizzle the extra dressing on top.
