Shrimp and papaya salad

Tantalize your taste buds with this refreshing shrimp and papaya salad that combines the sweetness of ripe papaya with zesty shrimp in a tangy dressing.

Ingredients:

  • 1 small or medium papaya
  • 40 small shrimp or 12 large chopped roughly
  • 2 tablespoons mayonnaise
  • 1.5 tablespoons ketchup
  • 1/4 teaspoon papaya seeds (or 1/2 tsp if you like it peppery)
  • 1/4 teaspoon dried tarragon
  • 1/8 teaspoon kosher salt
  • 1/8 teaspoon ground white pepper

Instructions:

  1. Slice the papaya down the middle lengthwise and scoop out the seeds, keeping them in a separate dish.
  2. Combine mayonnaise, ketchup, papaya seeds, tarragon, salt, and white pepper in a food processor or small blender until the papaya seeds are finely crushed. Allow the mixture to sit for half an hour or overnight.
