Shrimp and melon salad

Delight in the refreshing blend of succulent shrimp and juicy melon in this vibrant salad bursting with flavors of summer.

Ingredients:

  • Salt
  • 450g shrimp, cooked-peeled and deveined
  • 1 lemon, juiced
  • 1360g seedless watermelon, rind removed, cut into chunks
  • 1 honeydew, rind removed, cut into chunks
  • 1/2 red onion, sliced thin
  • 1 jalapeno, chopped
  • 2 tablespoons fresh lime juice
  • 1 teaspoon honey
  • 4 tablespoons olive oil
  • Salt and freshly ground black pepper

Instructions:

  1. Heat water in a medium saucepan until boiling. Stir in a pinch of salt and freshly squeezed lemon juice. Once the water is boiling, gently add the shrimp and cook until they change color to opaque pink. Take out the shrimp from the pan and quickly place them in cold water to halt the cooking process.In a spacious bowl, mix together watermelon, honeydew, chopped onion, and diced jalapeno.Combine lime juice, honey, olive oil, and a sprinkle of salt and pepper in a different bowl.Pour the mixture over the melon salad and mix well.
