Shredded charred corn salad

Discover the irresistible flavors of charred corn in this delightful shredded salad. Perfect blend of smokey, sweet, and tangy notes in every bite!

Ingredients:

  • ½ small white cabbage, finely shredded
  • 2 carrots, grated
  • 1 red onion, halved and finely sliced
  • 3 tbsp cider vinegar
  • 1 tsp caster sugar
  • 4 corn cobs
  • 1 tbsp wholegrain mustard

Instructions:

  1. Place the cabbage, carrots, and onion in a bowl. Sprinkle with salt, then mix in the vinegar and sugar, and stir until well combined. Allow the mixture to sit for 20 minutes to lightly pickle the vegetables.
  2. While waiting, grill the corn over high heat on a barbecue or griddle for 4-5 minutes on each side until the kernels are charred. Let it cool before cutting the kernels off the cob by standing it upright on a cutting board and slicing downward with a sharp knife.
  3. Add the mustard and half of the grilled corn to the salad and taste for seasoning. Adjust by adding more salt and pepper if necessary. Top the salad with the remaining grilled corn before serving.
