Shredded cabbage salad with pomegranate and tomatoes

Delight in the refreshing blend of crunchy cabbage, juicy pomegranate arils, and succulent tomatoes in this vibrant and flavorful salad.

Ingredients:

  • 1 small head of green cabbage, thinly sliced
  • 1/4 teaspoon sugar
  • 1 teaspoon kosher salt, plus more
  • 1/4 teaspoon freshly ground black pepper, plus more
  • 1/2 small onion, finely chopped
  • 1/4 cup fresh lemon juice
  • 1/4 cup vegetable oil
  • 1 tablespoon white wine vinegar
  • 1 pint cherry tomatoes, halved
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup chopped fresh mint
  • 1/2 cup pomegranate seeds

Instructions:

  1. Mix shredded cabbage with sugar, 1 teaspoon of salt, and 1/4 teaspoon of pepper in a big bowl. Cover it and leave it at room temperature for 30 minutes to let the cabbage soften (alternatively, cover and refrigerate for up to 2 hours).
  2. Combine chopped onion, lemon juice, oil, and vinegar with the cabbage. Gently mix the ingredients together. Allow it to sit uncovered at room temperature for 5 minutes. Afterwards, add diced tomatoes, chopped cilantro, fresh mint, and pomegranate seeds. Toss everything together. Taste the salad and adjust the seasoning by adding more salt and pepper if necessary.
