Shredded cabbage salad with pomegranate and tomatoes

Ingredients:
- 1 small head of green cabbage, thinly sliced
- 1/4 teaspoon sugar
- 1 teaspoon kosher salt, plus more
- 1/4 teaspoon freshly ground black pepper, plus more
- 1/2 small onion, finely chopped
- 1/4 cup fresh lemon juice
- 1/4 cup vegetable oil
- 1 tablespoon white wine vinegar
- 1 pint cherry tomatoes, halved
- 1/2 cup chopped fresh cilantro
- 1/2 cup chopped fresh mint
- 1/2 cup pomegranate seeds
Instructions:
- Mix shredded cabbage with sugar, 1 teaspoon of salt, and 1/4 teaspoon of pepper in a big bowl. Cover it and leave it at room temperature for 30 minutes to let the cabbage soften (alternatively, cover and refrigerate for up to 2 hours).
- Combine chopped onion, lemon juice, oil, and vinegar with the cabbage. Gently mix the ingredients together. Allow it to sit uncovered at room temperature for 5 minutes. Afterwards, add diced tomatoes, chopped cilantro, fresh mint, and pomegranate seeds. Toss everything together. Taste the salad and adjust the seasoning by adding more salt and pepper if necessary.
