Shredded beet and carrot salad

Enjoy the fresh burst of flavors in this colorful shredded beet and carrot salad. A delightful combination of sweet and earthy notes in every bite.

Ingredients:

  • Juice of 1 lemon
  • Juice of 1 orange 
  • 3 tablespoons olive oil 
  • Kosher salt and freshly ground black pepper 
  • 4 large carrots 
  • 2 Granny Smith apples, peeled, cored and quartered 
  • 1 large jarred pickled red beet, sliced into matchsticks 

Instructions:

  1. Combine the lemon juice, orange juice, olive oil, and a pinch of salt and pepper in a spacious bowl.
  2. Using a food processor with a large grating attachment, grate the carrots and apples one by one. Mix the shredded carrots, apples, and pickled beets with the tangy dressing and plate.
