Shirazi salad

Enjoy the refreshing blend of diced cucumbers, tomatoes, onions, and herbs in this classic Shirazi salad. Perfect for a light and flavorful side dish.

Ingredients:

  • 1 Lemon
  • 2 tablespoons Olive oil, divided
  • 1-2 teaspoons Dried mint
  • 1/4 cup Minced red onion (about 1/2 of a small onion)
  • 1 English cucumber
  • 3 Medium tomatoes
  • Flake sea salt
  • Fresh ground black pepper

Instructions:

  1. Prepare a small bowl that will not react to acidic ingredients, and grate the outer yellow skin and extract the juice from a lemon. While stirring continuously, pour in 1 tbsp. of olive oil gradually to create an emulsion. Incorporate chopped onion and fresh mint, and let it sit for about 15 minutes.
  2. Cut the cucumber and tomatoes into small pieces and place them in a large bowl that does not react to acidic foods. Mix in the lemon juice and onion mixture.
  3. Adjust the seasoning with flaky salt and ground black pepper according to your preference. Drizzle with the remaining olive oil if preferred. Serve right away or refrigerate briefly before serving.
  4. Please be advised that there have been some tweaks made to this recipe throughout the years - such as the addition of zucchini, different herbs on occasion, and even some leftover trout once (which surprisingly turned out quite well). However, the simplicity of the original recipe remains unbeatable!
