Shaved root vegetable salad with pistachios

Delight in the crunchy texture of shaved root veggies mixed with the nutty flavor of pistachios in this vibrant and nutritious salad.

Ingredients:

  • ½ teaspoon grated orange zest
  • 2 tablespoons orange juice
  • 2 tablespoons champagne vinegar
  • 2 tablespoons extra-virgin olive oil
  • ½ teaspoon honey
  • ½ teaspoon salt
  • ¼ teaspoon ground pepper
  • 450g beets and/or carrots, peeled
  • ¼ cup crumbled goat cheese
  • ¼ cup chopped toasted pistachios
  • ¼ cup chopped fresh mint

Instructions:

  1. Combine orange zest, orange juice, vinegar, oil, honey, salt, and pepper in a spacious bowl.
  2. Thinly cut vegetables into ribbons using a vegetable peeler. Place them in the bowl and mix with the dressing. Allow it to sit for 10 minutes.
  3. Place the vegetables nicely on a serving platter and pour over any remaining dressing from the bowl. Sprinkle with goat cheese, pistachios, and mint.
