Shaved root vegetable salad with pistachios

Ingredients:
- ½ teaspoon grated orange zest
- 2 tablespoons orange juice
- 2 tablespoons champagne vinegar
- 2 tablespoons extra-virgin olive oil
- ½ teaspoon honey
- ½ teaspoon salt
- ¼ teaspoon ground pepper
- 450g beets and/or carrots, peeled
- ¼ cup crumbled goat cheese
- ¼ cup chopped toasted pistachios
- ¼ cup chopped fresh mint
Instructions:
- Combine orange zest, orange juice, vinegar, oil, honey, salt, and pepper in a spacious bowl.
- Thinly cut vegetables into ribbons using a vegetable peeler. Place them in the bowl and mix with the dressing. Allow it to sit for 10 minutes.
- Place the vegetables nicely on a serving platter and pour over any remaining dressing from the bowl. Sprinkle with goat cheese, pistachios, and mint.
