Shaved mushroom, celery, and sesame salad

Ingredients:
- 2 stalks celery, ends trimmed
- 140g cremini or button mushrooms (about 8), ends trimmed
- 1 ½ teaspoons fresh lemon juice
- 1 ½ teaspoons white wine vinegar
- Kosher salt
- 2 tablespoons well-stirred tahini
- 1 tablespoon olive oil
- Handful whole parsley leaves
- Flaky salt
- Freshly ground black pepper
Instructions:
- Prepare the celery by cutting a small incision into the outer end of the stalk and pull along its length to remove the strings. Repeat if necessary for wider stalks. Use a mandoline to thinly slice the celery and mushrooms. Combine them in a large bowl and mix with lemon juice, vinegar, and ½ teaspoon of kosher salt. Let it sit for 5 minutes.
- In a small bowl, mix tahini with about 2 tablespoons of water until smooth. Adjust the consistency by adding more water or tahini to achieve a whipped cream cheese-like texture. Season with a pinch of kosher salt. Spread the mixture on a serving platter or divide it onto individual plates using the back of a spoon.
- Combine olive oil and parsley with the mushrooms, then gently toss to mix. Arrange the mushroom mixture on top of the tahini. Sprinkle with flaky salt and black pepper.
- Serve immediately, ensuring to scoop up the tahini with the mushroom-celery salad. Consume within an hour, since the mushrooms release liquid over time.
