Shaved fennel salad with plums

Ingredients:

  • medium fennel bulbs
  • small plums, halved, or 3 medium plums, quartered
  • tablespoons Champagne vinegar or white wine vinegar
  • tablespoons olive oil, plus more for drizzling
  • Kosher salt, freshly ground pepper

Instructions:

  1. Separate the stalks and fronds from the fennel bulbs. Slice the fennel bulbs thinly using a mandoline and place them in a large bowl. Reserve the fronds. Slice the stalks thinly and add them to the bowl along with plums, vinegar, and 2 tablespoons of oil. Season with salt and pepper, then mix well. Allow the salad to rest for 5 minutes.
  2. Roughly chop the reserved fennel fronds and sprinkle them over the salad. Drizzle some additional oil on top.
