Shaved fennel salad with plums

Ingredients:
- medium fennel bulbs
- small plums, halved, or 3 medium plums, quartered
- tablespoons Champagne vinegar or white wine vinegar
- tablespoons olive oil, plus more for drizzling
- Kosher salt, freshly ground pepper
Instructions:
- Separate the stalks and fronds from the fennel bulbs. Slice the fennel bulbs thinly using a mandoline and place them in a large bowl. Reserve the fronds. Slice the stalks thinly and add them to the bowl along with plums, vinegar, and 2 tablespoons of oil. Season with salt and pepper, then mix well. Allow the salad to rest for 5 minutes.
- Roughly chop the reserved fennel fronds and sprinkle them over the salad. Drizzle some additional oil on top.
