Shaved fennel salad with frisée, almonds, and raisins

Refreshing shaved fennel salad with a delightful mix of frisée, crunchy almonds, and sweet raisins. A burst of flavors and textures in every bite.

Ingredients:

  • 1 large fennel bulb
  • 2 celery stalks
  • Juice of 3 lemons
  • 1/4 cup extra-virgin olive oil
  • 1 head frisée, trimmed and washed
  • 2 tablespoons golden raisins
  • 1/4 cup toasted almonds, chopped
  • Parmesan shavings, to taste (optional)

Instructions:

  1. Thinly slice the fennel and celery using a mandoline slicer or a sharp knife. Mix the sliced fennel and celery with lemon juice and olive oil in a bowl, and let it marinate for about half an hour.
  2. Separate the fennel and celery from the marinade, keeping the dressing aside. Leave the fennel aside and coat the frisée with the reserved dressing.
  3. Arrange the dressed frisée on a plate. Sprinkle with raisins, almonds, fennel, celery, and optionally some parmesan shavings.
