Shaved fennel salad with frisée, almonds, and raisins
Refreshing shaved fennel salad with a delightful mix of frisée, crunchy almonds, and sweet raisins. A burst of flavors and textures in every bite.
Ingredients:
- 1 large fennel bulb
- 2 celery stalks
- Juice of 3 lemons
- 1/4 cup extra-virgin olive oil
- 1 head frisée, trimmed and washed
- 2 tablespoons golden raisins
- 1/4 cup toasted almonds, chopped
- Parmesan shavings, to taste (optional)
Instructions:
- Thinly slice the fennel and celery using a mandoline slicer or a sharp knife. Mix the sliced fennel and celery with lemon juice and olive oil in a bowl, and let it marinate for about half an hour.
- Separate the fennel and celery from the marinade, keeping the dressing aside. Leave the fennel aside and coat the frisée with the reserved dressing.
- Arrange the dressed frisée on a plate. Sprinkle with raisins, almonds, fennel, celery, and optionally some parmesan shavings.
