Shaved fennel salad

Ingredients:

  • 280g arugula leaves
  • 2 oranges, segmented
  • 1 small bulb fennel, thinly sliced
  • 3 tablespoons olive oil
  • 1 lemon, juiced
  • Kosher salt and freshly ground black pepper

Instructions:

  1. Mix the arugula, oranges, and fennel in a big bowl. Drizzle in the olive oil and lemon juice then mix well. Sprinkle with salt and pepper.
