Shaved fennel, celery and avocado salad

Delight in the crunch of shaved fennel, crisp celery, and creamy avocado in this refreshing salad bursting with herbaceous, citrusy flavors.

Ingredients:

  • 1 Fennel
  • 4-6 Celery stalks
  • 1 Small shallot
  • 1 Ripe avocado, thinly sliced
  • 1/2 cup Toasted walnuts, roughly chopped
  • 1 Lemon, zest and juice
  • 1/4 cup Mint, torn
  • 1/4 cup Parsley, torn
  • 1/4 cup Shaved Parmigiano
  • Extra virgin olive oil, to taste
  • Maldon salt and freshly cracked pepper to taste

Instructions:

  1. Cut the fennel, celery, and shallot into very thin slices using a sharp knife or a mandoline. If you have the time, you can soak them all together in ice water for 10 minutes, then remove and dry them by patting or spinning. This step is not necessary, but it will give them an additional crunch and help mellow out the flavor of the shallot. Arrange the thinly sliced fennel, celery, and shallot with avocado, walnuts, Parmesan, and any other additional ingredients you like. Drizzle lightly with high-quality extra virgin olive oil and add the zest and juice of a lemon. Season with a good amount of Maldon salt and freshly ground pepper. Enjoy your delicious salad!
