Shaved fennel & asparagus quinoa salad

Ingredients:

  • 1/2 cup quinoa, uncooked
  • 1 bunch asparagus
  • 1 bulb fennel, thinly sliced

  • 50g Manchego, thinly sliced
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon olive oil
  • zest of one lemon
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

  1. In a small saucepan, mix the quinoa with 1 cup of water. Heat until it boils, then cover the pan, lower the heat, and allow it to simmer for 15 minutes. Turn off the heat and keep it covered for another 15 minutes. Use a fork to separate the grains.Place asparagus, fennel, onion, and Manchego cheese together on a spacious plate.Scatter the quinoa over the salad.Mix the lemon juice, zest, olive oil, salt, and pepper to create the dressing. Coat the salad with the dressing. Serve promptly.
