Shaved brussels sprouts salad

  • 1/3 cup chopped dried apricots
  • 1/3 cup chopped hazelnuts
  • 1/3 cup diced pecorino 

Instructions:

  1. To prepare the vinaigrette: Mix together the lemon juice, orange juice, and shallots in a medium bowl. Allow it to sit for 5 minutes to let the acidity from the juice soften the shallots. Incorporate the Dijon mustard and honey into the mixture until thoroughly blended. Gradually pour in the oil while whisking vigorously until it forms a uniform mixture. Season generously with salt and add pepper to taste.For the salad: Combine the Brussels sprouts, apricots, hazelnuts, and pecorino cheese with the prepared vinaigrette and mix well. If preferred, you can dress the salad 15 to 20 minutes ahead of serving for softer Brussels sprouts.
