Shaved brussels sprouts salad

  • 15 Brussels Sprouts
  • 2 tablespoons good olive oil
  • 2 tablespoons rice wine or other gentle vinegar
  • .25 cups dried cherries, chopped
  • .5 cups feta cheese, crumbled
  • 1 dash kosher salt, big
  • 1 teaspoon ground black pepper
  • .5 cups chopped red onion

Instructions:

  1. Wash the sprouts thoroughly, remove the ends, halve them and finely chop with the flat side down.
  2. Separate the sprouts gently and break up any big pieces
  3. Combine all the remaining ingredients and mix well. Enjoy chilled or at room temperature. Refrigerate for storage.
