Shaved brussels sprout salad with red onion, lemon and pecorino

Ingredients:
- 1/2 small red onion
- 1 lemon, juiced
- 1 teaspoon honey
- 1 teaspoon whole grain mustard
- 1 pinch salt and freshly ground black pepper
- 1 tablespoon olive oil
- 3 cups Brussels sprouts (use larger sprouts if possible)
- 1/2 cup finely grated pecorino romano
Instructions:
- Place the onion slices in a small bowl of cold water and let them soak for 15 to 20 minutes as you get the other ingredients ready.
