Shaved broccoli stalk salad with soft feta & golden raisins

Indulge in the refreshing flavors of shaved broccoli stalk salad paired with creamy feta cheese and sweet golden raisins. Perfect balance of textures and tastes!

Ingredients:

  • 2 bunches broccoli with leaves, washed
  • 2 tablespoons extra-virgin olive oil
  • Zest from 1 lemon plus the juice from half
  • 1 cup golden raisins
  • 1 cup French feta (or regular crumbled feta)
  • 1/3 cup Marcona almonds
  • Salt (I use kosher)
  • Black pepper

Instructions:

  1. Remove all the leaves from the broccoli stems and cut the florets. Place both in a bowl.
  2. Halve the stalks and use a sharp vegetable peeler to remove the tough outer skin. Get rid of the skin. Use the peeler to thinly slice along the halved stalks. Use a paper towel to gently press and remove any extra liquid.
  3. Put the sliced stalks, florets, and leaves in a big mixing bowl. Mix in the olive oil, lemon zest, juice, raisins, feta, and nuts. Toss gently. Season with salt and pepper. Transfer to a platter or large serving bowl.
  4. Enjoy right away or refrigerate (can be prepared a few hours in advance).
