Shaved asparagus salad with peas, mint, and feta

Indulge in the refreshing flavors of shaved asparagus, sweet peas, vibrant mint, and creamy feta in this delightful and colorful salad.

Ingredients:

  • 450g asparagus, any size
  • 1/2 cup frozen peas
  • 1 cup crushed croutons
  • 1/4 cup mint, chopped
  • 1 cup feta cheese crumbles
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons freshly squeezed lemon juice
  • 4 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper

Instructions:

  1. Rinse the asparagus thoroughly and cut off the ends. Use a peeler to slice the asparagus into thin pieces and transfer them to a spacious bowl. Dry the shavings with a gentle press.
  2. In a pot, place the peas and cover them with water. Bring the water to a boil and let the peas cook for about 3 to 5 minutes until they turn vibrant green and get warm. Afterward, drain the water and gently dry the peas before adding them to the bowl with asparagus shavings.
  3. Prepare the dressing by mixing lemon juice, olive oil, salt, and pepper. Pour the dressing over the vegetables in the bowl along with feta cheese, croutons, and chopped mint. Gently toss everything together and adjust the seasoning with more salt and pepper as needed.
