Shaved asparagus salad with feta and peas

Enjoy the vibrant flavors of fresh shaved asparagus combined with creamy feta and sweet peas in this delectable salad. Perfect for a light and refreshing meal!

Ingredients:

  • 1 bunch asparagus, washed and well-dried
  • 1 big handful arugula
  • 1/4 cup green peas, fresh or frozen and thawed
  • 1/8 cup (2 tablespoons) deshelled pistachios, roughly chopped
  • 60g feta, crumbled
  • Juice from half a lemon
  • Good olive oil
  • Fresh ground pepper
  • Flaky sea salt, like Maldon

Instructions:

  1. Slice the asparagus into thin strips (you can use a cheese slicer, or a vegetable peeler with some care): Grip the bottom of the asparagus with one hand and slide the peeler from about half an inch from the end all the way to the tip. Repeat the process by turning the asparagus by 90 degrees after each slice until the whole stalk is sliced, excluding the ends. I recommend leaving some slices long and cutting some into smaller pieces to add variety.
  2. Combine the asparagus strips with arugula, peas, pistachios, and feta cheese. Drizzle with lemon juice and a generous amount of olive oil, then season with freshly ground pepper and a pinch of flaky salt.
  3. Serve immediately! Sliced asparagus has a larger surface area exposed, which can lead to the salad becoming soggy if kept for too long. Do not mix the salad until you are ready to eat.
