Shaved asparagus salad

Ingredients:

  • 1 bunch asparagus
  • 1 teaspoon lemon juice
  • 3 teaspoon olive oil
  • zest of 1/4 lemon, sliced thinly
  • 1 clove garlic, sliced
  • 2 tablespoon toasted sliced almonds
  • 1/4 teaspoon kosher salt
  • pepper, to taste

Instructions:

  1. Peel the asparagus with a vegetable peeler, starting from the bottom of the stalk towards the top. Transfer to a spacious bowl. Mix in the lemon juice and 2 teaspoons of olive oil. Keep to the side.
