Sharon's herbed tomato salad

Ingredients:
- 6-8 Heirloom tomatoes
- 2 tablespoons olive oil
- 1 teaspoon red wine vinegar
- 1/2 teaspoon sea salt
- 1/2 teaspoon seasoned pepper
- 1/2 teaspoon sugar
- 1/2 teaspoon dried oregano leaves OR 1 1/2 t. fresh oregano, snipped (I grow Mexican Oregano, which when used adds a wonderful "zing")
- 4-6 fresh basil leaves, snipped. Experiment with different varieties of basil.
Instructions:
- Cut fresh heirloom tomatoes or other preferred tomatoes into slices or wedges with the skin on (avoid using Romas as they are not juicy enough) and place them in a large mixing bowl.
- Combine the remaining ingredients for the "herbed dressing" and mix until the sugar and salt slightly dissolve. Drizzle over the tomatoes and gently mix to combine the dressing with the tomato juices. Serve promptly or within 30-45 minutes at room temperature. Tomatoes are most flavorful when not refrigerated.
- I often double the dressing ingredients to make a larger batch. Adjust according to the size of your tomatoes and desired juiciness level. Enjoy this garden-fresh dish!
