Shaking beef with pea shoot salad

Ingredients:
- 450g fresh snow pea shoots (about 14 packed cups) or spinach
- ½ teaspoon 1/2 teaspoon kosher salt
- ¼ teaspoon granulated sugar
- ⅛ teaspoon ground white pepper
- 2 tablespoons peanut oil or vegetable oil
- 4 medium garlic cloves, smashed
- 1 teaspoon thinly sliced unseeded red jalapeño
Instructions:
- Rinse the pea shoots in multiple changes of cold water; dry the greens thoroughly either by patting them with a cloth or using a salad spinner. Combine salt, sugar, and white pepper in a small bowl; leave on the side.
- Warm up a 14-inch flat-bottomed wok or a 12-inch skillet over high heat until a drop of water disappears within 1 to 2 seconds. Add oil. Put in garlic and jalapeño; cook, continuously tossing and stirring (stir-frying) the mixture quickly with a metal spatula until it gives off a pleasant smell, around 10 seconds. Add the pea shoots; stir-fry continuously until they just start to wilt, approximately 30 seconds. Sprinkle the salt mixture over them; stir-fry continuously until the pea shoots are slightly wilted but still vibrant green and the stems are tender-crisp, for about 2 to 3 minutes.
