Sesame noodle salad with seared mushroom "scallops"

Ingredients:
- 3 tablespoons toasted sesame oil
- 2 tablespoons rice wine vinegar
- 3 tablespoons soy sauce or tamari
- 2 teaspoons honey
- 1 teaspoon freshly grated ginger root
- 2 teaspoons Sriracha
- 2 tablespoons lime juice
- 1/4 teaspoon dried red chile flakes
- 170g soba noodles
- 1/2 cup sliced celery
- 1/2 red bell pepper, julienned
- 1/2 cup shredded carrots
- 1 cup thinly sliced purple cabbage
- 1 jalapeño, thinly sliced (optional)
- 2 king oyster mushrooms, tops removed and cut into 1-inch rounds
- 1 tablespoon olive oil
- 1 pinch salt and pepper, to taste
- 1 pinch cilantro leaves, for garnish
- 1 dash toasted sesame seeds, for garnish
- 1 lime, for serving
Instructions:
- Combine all the dressing ingredients by mixing them thoroughly. Set them aside.
- Prepare the soba noodles as per the instructions on the package. After cooking, drain and rinse the noodles with cold water. Mix the noodles with the dressing and then add the celery, bell pepper, carrots, cabbage, and slices of jalapeño. Check the taste and adjust the seasoning with salt and pepper as needed.
- Warm a nonstick skillet on medium heat. With a knife, lightly score both sides of the mushrooms to create an X pattern (be cautious not to cut too deeply). Brush the mushroom slices with olive oil and season them with salt and pepper. Once the skillet is hot, place the mushrooms in a single layer (avoid overcrowding). Sear them on one side until they turn golden brown, approximately 4 minutes, then flip them over and repeat the process. Once cooked, transfer the mushrooms to a plate lined with paper towels.
- When ready to serve, divide the noodle salad among bowls. Garnish with cilantro leaves, sesame seeds, and a few pieces of the seared mushrooms. Accompany with lime wedges. Enjoy the dish!
