Sesame-honey carrot ribbon salad

Ingredients:

  • 3-5 large carrots (about 340g)
  • 2 tablespoons orange juice
  • 2 tablespoons rice vinegar
  • 1 tablespoon reduced-sodium tamari or soy sauce
  • 1 teaspoon toasted (dark) sesame oil
  • 1 teaspoon honey
  • ¼ teaspoon garlic powder
  • 3 scallions, sliced
  • 2 tablespoons toasted sesame seeds

Instructions:

  1. Create long and thin pieces of carrots using a vegetable peeler or mandoline until you have approximately 8 cups of carrot ribbons.
  2. In a spacious bowl, mix together orange juice, vinegar, tamari (or soy sauce), oil, honey, and garlic powder. Add the carrot ribbons and scallions, then mix thoroughly to cover them. Allow the mixture to sit for 5 minutes before mixing again. Right before serving, top it off with sesame seeds.
