Sesame–ginger chicken pasta salad

Ingredients:

  • One 6-ounce chicken breast
  • Sea salt
  • Freshly ground pepper
  • 1 tablespoon extra-virgin olive oil
  • 170g bowtie pasta
  • 2 tablespoons mayonnaise
  • 2 tablespoons plain Greek yogurt
  • 1 1/2 teaspoons sesame oil
  • 1/4 teaspoon soy sauce
  • 1/4 teaspoon brown sugar
  • 1 small carrot, grated
  • 3 tablespoons sliced green onion

Instructions:

  1. Season the chicken breast with a pinch of sea salt and ground pepper. Heat some extra-virgin olive oil in a small pan over medium high heat. Add the seasoned chicken and cook for 1 minute. Then, flip the chicken, lower the heat, cover, and cook for 8 minutes. Take the pan off the heat and let it sit covered for 10 minutes. After that, shred the chicken using 2 forks.
  2. While the chicken is resting, cook the pasta in a large pot of boiling salted water as per the package instructions. Once cooked, drain and rinse the pasta under cold running water.
  3. Combine mayonnaise, Greek yogurt, sesame oil, soy sauce, brown sugar, and a pinch of sea salt in a small bowl.
  4. In a large bowl, mix the cooked pasta and shredded chicken with the prepared dressing. Add grated carrot and chopped green onions, and mix until everything is well coated.
