Sesame-garlic spinach salad

Ingredients:
- 2 tablespoons toasted sesame oil
- 2 cloves garlic, minced
- 2 tablespoons rice vinegar
- 1 tablespoon reduced-sodium tamari or soy sauce (see Tip)
- 140g spinach
- 1 cup shredded carrot (2 medium)
- 1 cup thinly sliced radishes
- ½ cup thinly sliced scallions
- ¼ cup sesame seeds
Instructions:
- Warm oil in a medium frying pan over medium-low heat. Put in minced garlic and sauté, stirring occasionally, until it gives off a nice smell, for roughly 2 minutes. Blend in rice vinegar and tamari (or soy sauce). Shift the heated dressing to a big bowl and mix in spinach, carrot, radishes, scallions, and sesame seeds. Stir well to mix everything together.
