Sesame chicken with radicchio & orange salad

Ingredients:

  • 2 navel oranges
  • 1 head radicchio
  • 2 boneless, skinless chicken breasts
  • 3/4 cup sesame seeds
  • 1 teaspoon kosher salt, plus more to taste
  • 1/2 cup peanut oil, depending on the size of your pan
  • 1/2 tablespoon toasted sesame oil

Instructions:

  1. Prepare the salad by cutting the radicchio in half lengthwise and removing the core before chopping it roughly and placing it in a bowl. Peel the orange using your hands or a knife: slice off the top and bottom of the orange, then slice the skin vertically from top to bottom while keeping as much flesh as possible. Cut the orange into chunks and add them to the radicchio. Chill the mixture in the refrigerator while you work on the chicken.Slice the chicken breasts horizontally after freezing them for 15 minutes to make it easier (a tip from Cooks Illustrated). Place the chicken between plastic wrap or parchment paper and flatten them to an even thickness of about 1/4 to 1/2 inch.Crush the sesame seeds in a mortar using a pestle until some are powdery and others remain whole. Mix in the salt and spread the mixture on a plate.Pour the peanut oil into a straight-sided cast-iron skillet to a depth of about 1/4 inch, adjusting as needed. Heat the oil over medium-high heat. Coat the chicken pieces in the sesame seed mixture, ensuring each piece is fully coated. To test if the oil is hot enough, drop a few sesame seeds in it; they should sizzle immediately. Fry the chicken in batches if necessary to avoid overcrowding the pan.Cook the chicken for 3 to 4 minutes on each side until browned on the outside and cooked through. Transfer the cooked chicken to a rack to drain and cook the remaining chicken in more oil if needed.Once the chicken is cooked, season the salad with salt and sesame oil, toss well, and adjust the seasoning to taste.Serve the sesame chicken immediately, either on top of or alongside the dressed salad.
