Sesame chicken cucumber noodle salad

Enjoy the refreshing crunch of cucumber noodles combined with succulent sesame chicken in this flavorsome and nutritious salad.

Ingredients:

  • 1 3-ounce package low-fat ramen-noodle soup mix, (see Note)
  • ¼ cup slivered almonds
  • 1 tablespoon sesame seeds
  • 1 1/2 teaspoons canola oil
  • 450g boneless, skinless chicken breasts, trimmed
  • 3 1/4-inch-thick slices fresh ginger
  • ½ teaspoon salt
  • 3 tablespoons orange juice
  • 3 tablespoons cider vinegar
  • 5 teaspoons reduced-sodium soy sauce
  • 5 teaspoons sugar
  • ¾ teaspoon toasted sesame oil
  • 2 cups shredded green cabbage
  • 1 medium carrot, shredded
  • 3 scallions, chopped

Instructions:

  1. Preheat the oven to 350°F.
  2. Break apart the ramen noodles and scatter them on a large rimmed baking sheet (discard the seasoning packet). Add almonds, sesame seeds, and canola oil; mix well. Bake for 10 minutes. Stir the mixture, then continue baking until the noodles turn golden brown, for about 5 more minutes. Allow the mixture to cool on the pan resting on a wire rack.
  3. While the noodle mixture is baking, place the chicken in a medium skillet or saucepan, covering it with water. Add ginger and salt; bring the mixture to a boil. Cover the pan, reduce the heat to low, and let it simmer gently until the chicken is no longer pink in the center and an instant-read thermometer inserted into the thickest part of the meat reaches 165°F, for approximately 10 to 15 minutes. Transfer the cooked chicken to a clean cutting board to cool down. Use forks to shred the chicken into bite-size pieces. (You can discard the liquid used for poaching the chicken.)
  4. Meanwhile, in a small bowl or jar with a tight-sealing lid, combine orange juice, vinegar, soy sauce, sugar, and sesame oil. Whisk or shake the mixture until the sugar completely dissolves.
  5. Right before serving, mix the shredded chicken, cabbage, carrot, and scallions in a large bowl. Add the toasted noodle mixture and the prepared dressing; toss everything together well.
