Sesame caesar salad
Indulge in the exquisite flavors of a sesame caesar salad! Crunchy romaine lettuce, savory parmesan cheese, and zesty caesar dressing create a tantalizing culinary experience.
Ingredients:
- 2 oil-packed anchovy fillets, chopped
- 1 small garlic clove, chopped
- 1 lemon, halved
- 3 Tbsp. tahini
- 2 tsp. Dijon mustard
- 3 Tbsp. grapeseed, sunflower, or vegetable oil
- 3 Tbsp. finely grated Parmesan, plus more for serving
- Kosher salt, freshly ground pepper
- 4 heads of Little Gem lettuce or 2 romaine hearts, trimmed, leaves separated
- 1 Asian pear, halved, cored, thinly sliced
- 1 tsp. toasted sesame seeds
Instructions:
- Place anchovies and garlic on a cutting board and use the flat side of a chef's knife to mash them together until a smooth paste is formed.
- Move the paste to a large bowl and add the juice of 1 lemon half (approximately 2 tablespoons). Mix in tahini, mustard, and 2 tablespoons of water. Slowly mix in oil until the dressing becomes thick and shiny. Stir in 3 tablespoons of Parmesan cheese and season with salt and pepper.
- Combine lettuce, tearing apart any large leaves, into the bowl with the dressing, along with slices of pear. Season with salt and mix until the leaves are coated.
- Pour the salad onto a platter and sprinkle extra Parmesan and sesame seeds on top. Grate the zest of the remaining lemon half finely over the salad.
