Delight in the whimsy of delicious spaetzle salad with a burst of flavors - tangy vinaigrette, fresh herbs, and crisp veggies. Experience a carnival of taste sensations!
Ingredients:
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/4 teaspoon ground pepper
- 4 eggs
- 1 cup milk
- 1 to 4 tablespoons butter, as need to lightly saute spaetzle
- 1 tablespoon minced fresh parsley leaves (from about a handful which has been rinsed and dried well in a salad spinner or with paper towels, before stripping from the stems)
Instructions:
- Mix together the flour, baking powder, salt, and black pepper in a bowl. Add eggs and milk, then whisk until a uniform batter forms. The batter should be thick enough to hold together, yet still loose so it can be pushed through a sieve to create dumplings with distinct strands. Adjust the consistency by adding more flour if too runny or more milk if too dry.
- In a pot, bring water to a boil and then lower the heat to a gentle simmer. Spoon portions of the batter into a strainer placed over the boiling water to form the spaetzle 'dumplings.' Using a slotted wooden spoon, transfer the dumplings to a platter as they float to the surface.
- Heat butter in a saute pan over medium-low heat. Quickly saute the spaetzle until lightly browned.
- Move the cooked spaetzle to a serving dish and garnish with parsley.
